Mid-week Recipe Delight

Like everything else the cost of food has become very expensive. If you’re like me you have a set budget for groceries every month. If you have a child (or children) who are experiencing a change in their tastebuds, you can easily find yourself going over your budget. The purpose of this segment is to provide delicious recipes at half the price (coupons included), and half the time. One of my favorite quick-fix recipes is chipotle chicken fajitas and guacamole.
1pk chicken breasts (cut into thin slices)
1 onion (chopped fine)
1 green & red pepper (cut into thin slices)
shredded cheddar & mozzarella cheese (use as much as needed)
Tabasco Chipotle sauce 8oz
After chicken breast has been cut and seasonsed, you will sear your meat until brown in light olive oil (cold pressed) in a non stick pan. Take chopped onions and peppers and sautee in light olive oil. Add meat, onions, peppers, shredded cheese in a soft tortilla shell. A few dabs of chipotle sauce. You’re done. Or you can put your tacos in the oven for 15 minutes on 350 with the sauce on top.
Now to make the Guacamole:
1 1/2 onion
2 red tomatoes
1 or 2 packs of guacamole seasoning
1 bag of Tostitos Jalapeno chips
Dig avocados out of the shell and smash with a fork until smooth. Add chopped onions, red tomatoes, and seasoning. Although lemon juice
is optional, it gives a extra kick. Blend with a spoon and enjoy.

Sargento shredded cheese 2 for $5.00 (Wegmans) or 2 12oz packs for $4.36 at BJ’s

2 avocados for $1.00 at Wegmans
Onions (added above)
Guacamole seasoning (any brand) .99
Tostitoss tortilla chips $4.39.
If you have a little one under the chipotle age, an almond butter and
honey sandwich with half a banana will do.
Try putting a few dabs of almond butter on the chicken while it’s searing in the pan.
